Ingredients

  • 1 cup 226g unsalted butter, softened
  • 1 cup 200g granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ teaspoon almond extract optional
Dry Ingredients
  • 3 cups 375g all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
For Decorating (Optional)
  • Royal icing
  • Colored sprinkles
  • Sanding sugar

Method

  2. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

  4. In a large bowl, beat the softened butter and sugar until light and fluffy, about 2–3 minutes.

  6. Mix in the egg, vanilla extract, and almond extract until fully combined.

  8. In a separate bowl, whisk together the flour, baking powder, and salt.

  10. Gradually add the dry ingredients to the wet mixture until a soft dough forms.

  12. Wrap the dough in plastic wrap and refrigerate for 30–60 minutes.

  14. Lightly flour your work surface and roll the dough to about ¼-inch thickness. Cut into desired shapes using cookie cutters or roll into balls for round cookies.

  16. Arrange the cookies on the prepared baking sheets about 2 inches apart.

  18. Bake for 8–10 minutes, or until the edges are just beginning to turn lightly golden.
