Ingredients
  

For the Crust & Crumble Topping
  • 1 cup unsalted butter softened
  • 1 cup light brown sugar packed
  • 2 cups all-purpose flour
  • 2 cups old-fashioned rolled oats
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
For the Caramel Filling
  • 11 ounces soft caramel candies unwrapped
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt optional
Optional Toppings
  • ½ cup chocolate chips
  • ¼ cup chopped pecans or walnuts
  • Flaky sea salt for garnish

Method
 

  1. Step 1
  2. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly grease it.

  4. In a large mixing bowl, combine the softened butter and brown sugar until creamy.

  6. Mix in the flour, oats, vanilla extract, baking soda, and salt until crumbly.

  8. Press about two-thirds of the mixture firmly into the prepared baking pan to form the crust.

  10. Bake the crust for 10–12 minutes, until it is lightly golden.

  12. Meanwhile, combine the caramel candies and heavy cream in a saucepan over low heat. Stir continuously until smooth. Remove from heat and stir in the vanilla extract and optional sea salt.

  14. Pour the warm caramel evenly over the baked crust.

  16. Sprinkle the remaining oat mixture evenly over the caramel layer.
