These homemade nuts bars are crunchy, naturally sweet, and packed with almonds, cashews, walnuts, pistachios, and seeds. They're perfect for breakfast, meal prep, lunchboxes, or a healthy grab-and-go snack.

Ingredients
  

  • 1 cup whole almonds
  • 1 cup cashews
  • 1 cup walnuts roughly chopped
  • ½ cup pistachios
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ½ cup rolled oats
  • ½ cup honey
  • ¼ cup natural peanut butter or almond butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • Optional: ¼ cup dried cranberries or raisins
  • Optional: ¼ cup dark chocolate chips

Method
 

  1. Step 1
  2. Preheat your oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.

  4. Spread the almonds, cashews, walnuts, pistachios, pumpkin seeds, sunflower seeds, and oats on a baking sheet. Toast for 8–10 minutes, stirring once halfway through.

  6. In a small saucepan over low heat, combine the honey, peanut butter, vanilla extract, cinnamon, and sea salt. Stir until smooth and fully combined.

  8. Transfer the toasted nuts and oats to a large mixing bowl. Add the dried cranberries if using.

  10. Pour the warm honey mixture over the nuts and stir until everything is evenly coated.

  12. Fold in the chocolate chips only after the mixture has cooled slightly to prevent melting.

  14. Transfer the mixture into the prepared baking pan. Press it down firmly using the back of a spoon or the bottom of a measuring cup.

  16. Refrigerate for 2–3 hours, or until completely firm.

  18. Lift the mixture from the pan using the parchment paper and slice into 12 bars.
