Step 1
Preheat your oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.
Step 2
Spread the almonds, cashews, walnuts, pistachios, pumpkin seeds, sunflower seeds, and oats on a baking sheet. Toast for 8–10 minutes, stirring once halfway through.
Step 3
In a small saucepan over low heat, combine the honey, peanut butter, vanilla extract, cinnamon, and sea salt. Stir until smooth and fully combined.
Step 4
Transfer the toasted nuts and oats to a large mixing bowl. Add the dried cranberries if using.
Step 5
Pour the warm honey mixture over the nuts and stir until everything is evenly coated.
Step 6
Fold in the chocolate chips only after the mixture has cooled slightly to prevent melting.
Step 7
Transfer the mixture into the prepared baking pan. Press it down firmly using the back of a spoon or the bottom of a measuring cup.
Step 8
Refrigerate for 2–3 hours, or until completely firm.
Step 9
Lift the mixture from the pan using the parchment paper and slice into 12 bars.
