Peel and cut the ripe mangoes into pieces.
Blend the mango pieces until smooth to create about 2 cups of mango puree.
In a small bowl, mix the cornstarch with cold water until completely smooth.
Add the milk, heavy cream, sugar, and salt to a medium saucepan.
Heat the mixture over medium heat, stirring occasionally, until it becomes warm but does not reach a full boil.
Slowly whisk the cornstarch mixture into the warm milk mixture.
Continue cooking while whisking until the mixture thickens.
Remove the saucepan from the heat.
Stir in the mango puree and vanilla extract until completely combined.
Add lime juice if desired for a brighter tropical flavor.
Pour the mixture into individual dessert cups or serving bowls.
Allow the pudding to cool slightly at room temperature.
Cover and refrigerate for at least 2 hours, or until completely chilled and set.
Top with diced mango, whipped cream, and fresh mint just before serving.
