Step 1: Prepare the Oven
Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt.
Step 3: Cream Butter and Sugar
In a large bowl, beat the softened butter and sugar for about 3–4 minutes until light and fluffy.
Step 4: Add Eggs
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Step 5: Combine Wet and Dry Ingredients
Add half of the dry ingredients, followed by the sour cream, strawberry puree, and milk. Finish with the remaining dry ingredients and mix just until combined.
If desired, add a few drops of pink food coloring for a brighter cake.
Step 6: Bake
Divide the batter evenly between the prepared cake pans.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Step 7: Prepare the Frosting
Beat the butter until smooth and creamy.
Gradually add the powdered sugar.
Mix in the reduced strawberry puree, vanilla extract, salt, and heavy cream until the frosting becomes light and fluffy.
Step 8: Assemble the Cake
Place one cake layer on a serving plate.
Spread an even layer of strawberry buttercream over the top.
Add the second cake layer and frost the top and sides of the cake.
Decorate with fresh strawberries, strawberry slices, and freeze-dried strawberry crumbs if desired.
