For the Crust
  • 2 cups graham cracker crumbs

For the Filling

  • 16 oz 2 blocks cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • cups fresh strawberries finely chopped

For the Strawberry Topping

  • 2 cups fresh strawberries sliced
  • 2 tablespoons strawberry jam
  • 1 tablespoon lemon juice

Method
 

  1. Combine the graham cracker crumbs, melted butter, and sugar in a bowl.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. Refrigerate the crust while preparing the filling.
  4. Beat the softened cream cheese until smooth and creamy.
  5. Add the powdered sugar and vanilla extract, then mix until fully combined.
  6. In a separate bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture.
  8. Fold in the finely chopped fresh strawberries.
  9. Spread the filling evenly over the chilled crust.
  10. Smooth the top with an offset spatula.
  11. Mix the strawberry jam with lemon juice and lightly coat the sliced strawberries.
  12. Arrange the strawberry slices over the top of the cake.
  13. Refrigerate for at least 6 hours or overnight until fully set.
  14. Garnish with whipped cream, whole strawberries, and white chocolate curls before serving.
  15. Slice and serve chilled.
